can these recipes be adjusted

can someone figure a way to adjust these recipes to where they are acceptable for me to make and eat or are these no-nos?

Healthy muffins

2 c. shredded unpeeled apples
1 1/3 c. sugar
1 c. chopped cranberries or any kind of dried fruit or raisins or blueberries
1 c. chopped nuts
2 1/2 all purpose flour (could use wheat here )
1 tbs baking powder
2 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
2 eggs, slightly beaten
1/2 c oil

heres another;
Peanut butter and jelly muffins
1 c. pnut butter
1 egg
1/3 c. brown sugar
1 c. milk
1 1/2 c. whole wheat flour
1 tbs baking powder
1/2 c. grape or straw. jelly
1/3 c. sugar
last one i swear:
tuna or salmon muffins

2 6 oz cans tuna or salmon, drained well
2 eggs
1/4 c. celery, chopped fine, 1 oz
2 tbs onion, chopped fine, 1/2 oz
1/4 c. green pepper, minced, 1 oz
2 oz shredded cheddar
salt and pepper to taste
pinch old bay seasoning
Mix all ingred. and spoon into 6 well greased muffin cups. bake at 350 for 30 min until puffed, set and lightly browned around the edges.
6 servings.... can be frozen. per serving: 109 cals, 8 gm fat, 1 gm carb

*If anyone knows a good homeade protein bar i could make and take on the go (that won't keep me from my goal of course) I would loooove that.

I think it depends on your diet & body & goals. For me, I would limit it to one fruit, preferably a low GI fruit like the blueberries. I assume the shredded apples are to add some fiber and moisture. I would replace that moisture with some skim or soymilk. But, I have issues with sugars.

Use a different flour (i.e., rice flour or whole wheat flour) or a combo of flour (decrease the amount of flour if you do) & protein powder &/or ground flax seeds or wheat germ.

1/3 c. sugar --> Splenda ??

That's ALOT of sugar in that receipe. I assume the brown sugar is solely there to add color. Maybe add ground bran or kashi cereal to your flour (decrease the amount of flour if you do) if you want "brown muffins".

This looks GOOD to me. :p I'm going to make them this weekend. I need a nice protein snack in the afternoon.

I apologize if I didn't add measurements in my other posts. I've been cooking for 20 years and developed the habit of just knowing how much to add.

I recommend adding some vanilla or plain protein powder to those muffin receipes. I would use a whole wheat flour or another kind of flour in lieu of All purpose. All purpose flour is worse than some drugs, IMHO.

Sorry GF I don't do much cooking ... chances are I couldn't just eat one muffin lol :chomp:
 
nycgirl this is the recipe for a tarter sauce like topping that goes on the tuna muffins.
TARTAR SAUCE
1/4 cup mayonnaise
2 tablespoons dill pickle relish
1/8 teaspoon celery seed
Dash pepper
1/8 teaspoon dill (optional or use for garnish)

Mix all but the dill in a small bowl. Spoon about 1 tablespoon sauce over each Tuna Muffin.

*I'm sure you could use low fat mayo in place of the reg.*

.5 c. splenda
1 c. fresh blueberries
.5 c. chopped nuts
1 cup cup oat flour
1 cup whole oats
1 cup protien powder (whey will make batter wetter)
1 tbs baking powder
2 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
2 whites eggs, slightly beaten
You may need to adjust your cooking time...

heres another;

.5 cup splenda
1 c. skim milk
1 1/2 c. oat flour
1 tbs baking powder
.5 c. strawberry preserves.. sugar free

last one i swear:
tuna or salmon muffins

3 egg white
1/4 c. celery, chopped fine, 1 oz
2 tbs onion, chopped fine, 1/2 oz
1/4 c. green pepper, minced, 1 oz
2 oz shredded cheddar..... I use full fat cheese myself, but you could do nonfat
salt and pepper to taste
