Sounds like you have the right formula, but I agree completely with the need to count the calories, carbs and protein. The 5 to 6 meals a day is good and try to eat your more carb rich meals in the first 3 meals of the day after your workouts, then drop the carbs down with each of the last 3 meals. Also if you are not using it now you should be taking some Flax seed oil to compensate for the low fat in your diet and it also helps you to burn more fat
