im not one to listen to much for info but your "low carb day" has rice oats bread and some more oats. that might be alot still. maybe take out the 12pm rice and throw in some veggies instead... as a matter of fact add more veggies to each meal. i have spinach leaf chicken salads when i get bored of chicken. and its a quick reheat lunch meal. but those are just my thoughts. im sure someone with better qualifications will look it over for ya
