after 2 month layoff, need help losing 20 lbs

I hurt my shoulder and stopped lifting for 2 months and have gained 15-20 lbs. Will this diet, cardio and w/o burn fat, or will it also burn muscle ?

9 am- 30 min cardio ( 10 min incline treadmill walk and 20 min stationary bike. heartrate steady at 160 )

10:00 - protein shake ( 2 scoops whey with skim milk and a banana )

12:00 - turkey sandwich on whole wheat with 1 tbs miracle whip light ( can't eat sammy's without miracle whip )

2:00 - 2 scoops of whey with skim milk

5:00 - chicken, baked potato, green beans ( or similar )

7:30 - 45 min intense w/o

9:00 - post w/o shake ( 2 scoops of whey and banana )
