Hypertrofi can be achieved through overloading the musclefibers. Obviously there are many ways of doing this, one is not necesserily better then the other.
Was Dorian wrong when he only did 1-2 work sets pr. excercise? Was Arnold wrong when he did over 20 sets for an arm workout?
Try both routines and find out what fits you!

Muscles repair so much faster for them so they can do shit load of sets and then come back 3 days later and hit legs again. If u only taking little bit of juice or notthing at all 20 sets would be too much for u simple is that. Yes u will feel sore as hell but u still be over training!!
