Ingredients:
Can of red beans ( you can also use pinto beans, black beans, kidney beans), shredded cabbage ( you can find this already shredded on the salad side of the store), slice of red bell peppers, diced of garlic and onion, brown rice, eggs and pepper
First cook the brown rice and also cook some scrambled eggs.
On the other pan heat it up and add some olive oil. Once the olive oil is hot put the garlic , once is slightly brown add the diced onions, about 1 minute add the shredded cabbage and the red bell peppers,once the red bell pepper and cabbage feel soft and not tender or crispy add the red beans ( make sure you drain the liquid out), sprinle some peppers. About 3 minutes add the cook scrambled eggs and the cook brown rice. You can sprinkle some salt if you like or sprinkle it with lemon juice to spice it up
