Quinoa - not just for the birds.

I didn't find out about the benefits of this little seed until after I was diagnosed with a gluten intolerance. After doing some reading on it I can't believe I've been wasting my time with rice all of these years. I'll let you folks read about it while I down a bowl. Very universal as a side dish.

Quinoa With Spinach and Feta Cheese

2 cups chicken stock
1 cup quinoa-rinsed and drained
1 bunch spinach-drained and chopped
2 Tbs. pure pressed extra virgin olive oil
2 minced garlic cloves
1/2 cup diced onion
1 cup 'maters
1/4 cup fresh basil or 2 tsp. dried basil leaves
1 tsp, grated lemon zest
1/2 cup feta cheese
Black pepper to taste

In a med sized pan, with a tight fitting lid, bring stock to a boil. Add quinoa and return to a boil. Cover, reduce heat to low and simmer 15 minutes until allll liquid is GONE. Remove from heat and let sit, covered, 10 minutes. Blanch spinach.Drain, pressing all liquid from the leaves. Chop and set aside
In a lrg. non-stick skillet, heat oil over med-high heat. When oil is hot, add garlic and onion and saute til soft., about 5 minutes. Ass 'maters and cook 5 minutes. Add spinach,basil,prepared quinoa,lemon zest,fets and black pepper. Mix well and cook until heated thru.

I agree! It's the most ancient of super grains. Very good and intriguing texture as well. Fun to eat. :p
 
I just read an article on this in an old magazine and found it at the local health food store (This is a good thing because you can buy it in bulk and its cheap). This stuff is awsome. A great flavor, kind of like a couscous but with a little pop when you bite into them. Im never gonna gnaw on cardboard like brown rice again. Also a plus, it cooks in 15 minutes.
