Q on good portable carb source

right now i eat tuna on salad with an apple for lunch. but i have been advised against fruit as it is more likely to store as fat. so i know that yam would be the best but i have no access to warm this meal up. I am an a construction worker and am always on different locations. i dont like fating cold yams. so i was thinking if all bran or fiber one would be a ok subst. it has a low GI and a lot of fiber, plus no sugar. I would put it on my salad like crutons. Any ideas

Fiber One is a great cereal and so is Kashi...Why can't you cook sweet potatoe's, yams, etc at home and take it to work?
 
I am in a similar delima.
What I do for my carb is I boil sweet potato for 20-30 min till its nice and soft. Then I mash it up similar to mashed potato. It tastes great when cold or hot, and its portable.
 
thanks ill have to try mashing it. it just doesnt taste that good to me cold and i tried the fiber 1 and it was pretty good on my salad also for a little variety

Beans are an option: always good cold or not, but not too portable. A salad (in a container) can be full of carbs and fats if put together properly (i.e crutons and tomtoes).
