that is called the OMAD diet
I would actually recommend instead of doing that do alternate day fasting/eating
so example: MON no food, TUES 3 meals, WED no food, THURS 3 meals, etc.
the reason is we know that when you fast greater than 18 hours the benefits of autophagy, digestion, immune system, insulin sensitivity etc are multiplied. I'm all for intermittent fasting and 1 meal a day thing and they are excellent ways to boost what i wrote, but it isn't going to be as beneficial as alternate day fasting if you really want to eat the way humans evolved to eat
