well i personally have TRIED only calf liver...and its not too horrible if you cook it right. here is a site with some nutritional facts about 4 oz. of calf liver:
thanks bro, dont know if its calf or not, just came with the half cow that I bought
I mainly need the fat content, and thats the one thing not listed on that site, weird
All are good sources of protein. Liver is very high in cholesterol but this will only become a problem if your nutritional intake is high in saturated fats.

You bought a half cow?!?! Holy crap! That's so awesome, lol! If I were to conjure up an image of what heaven looks I would imagine it looks something like your freezer
it works out much cheaper when you guy it that way, it was $2(canadian) a pound including butchers fees, in the store lean hamburger cost more than that, and this included boxes of roasts, steaks, hamburger, etc, it was over 200lbs of meat
Creatine, naturally present within the body, is made by the liver, kidneys, and pancreas from the amino acids glycine, methionine, and arginine but it is stored in muscle tissues.
