Low Fat frying??

Just wondering if there is any oils that you can fry with that arent too fatening..was thinking bout making boneless buffalo wings with chicken breats but i realized i probably have to bread them...
 
if you deep fry in olive oil, use small batches of food so that it does not affect the temperature of the oil. also, make sure you use enough oil so that the food floats - it will absorb less fat.
 
Here's what I do to make the chicken wings "crunchy" without breading or frying in oil.

Bake the wings at 400 degrees F for 30-45 min (till done -- middle no longer pink) then broil till the skin crisps up. I don't eat the skin anyway so it doesn't matter to me. Once the skin is crisp, drain & toss with hot sauce or whatever wing sauce you like.

If you still want some sort of "breading" try this:
Rinse wings with water
Dip in beaten egg whites (can add a bit of egg beaters if you wish)
Dip in bran flakes which have been pulsed in a food processor till fine mixed with seasoning.
Bake according to above. The bran flakes shouldn't be too carb heavy cuz you won't use a ton & they're better than flour.
 
You can make hot wings in the oven. No need to fry them. there is a seasoning mix called McCormics bag-n-season hot wings. You just sprinkle the seasoning over the meat, chicken breast would work. Put it in the plastic bag and bake. They are very good.
