CATFISH

What you want fried or baked cause down here in gods country we only eat one way and that is fried I have some ways of baking it but if I get caught YOu could find me swinging from a Tall tree.
 
I avoid catfish like the plague...I watched too many talkshows growing up and I heard that catfish in particular has an extremely high concentration of carcinigins in them. If I remember correctly, this is in part due to them being bottom dwellers.

I don't think I've every tried it, so I don't miss it.

Now steaks on the other hand...I can eat me some steak!

For the catfish coat fillet lemon juice and then sprinkle with Emeril's Essence and cook in the broiler till light brown on both sides. Then plate the fillet, sprinkle with butter buds and a little shot of lemon. Enjoy.If you don't have Emerals Essence here is the mix. This is some good shit.
Emeril’s Original Essence:
2 1/2 tbsp. sweet paprika
2 tbsp. salt
2 tbsp. garlic powder
1 tbsp. black pepper
1 tbsp. onion powder
1 tbsp. Cayenne
1 tbsp. dried oregano
1 tbsp. dried thyme
Mix all of the ingredients together and store in an airtight container.
Can be stored for up to 3 months. Note: makes about 3/4 cup

I cut back on the salt some and add 1/2 tsp. of nutmeg.

yes I meant catfish fillets and beef steaks, you know regular steaks. I would like recipes for both. I have like a 12 pack of frozen fillets just aching to be prepared, and as far as steak goes, all I know how to do is cook them on a skillet(that has the raised grill marks). I would barbecue them, but my complex doesn't allow bbqs on the balcony :rolleyes: . also, suggestions for steaks sauces, and other condiments are also welcome. and yes, I do have emeril's original essence
 
If you are going to fry any fish dipping it in eggs is a must.
Beat a couple of raw eggs in a bowl.
Dip the fillets in the eggs
mix flour with crushed up cracker crumbs and your favorite spices in a plastic bag.
Place the fillet in the bag and shake.
Makes a great coating for frying fish.
Place fillet in skillet and enjoy.

Remember the raw egg on the fillet is a must.
