Cajun Tuna
four 6 oz. fish fillets
1 tbs. Cajun Spice( recipe to follow below)
4 tbs. unsalted butter
1 tbs extra virgin olIve oil
1 lemon-for garnish
Homemade Cajun Spice:
1 tsp. garlic powder
1 tsp. dried oregano
1/2 tsp chili powder
14 tsp white pepper
1/4 tsp black pepper
1/2 tsp. dried thyme
Rinse fish under cold water and pat dry w/ paper towels.
Mix all the cajun spices together and store in a jar and shake the hell outta the jar(lol). Rub mixcture on both sides of fish.
In aheavy saucepan,cast iron skillet works the best-IMO- heat butter and oil over high heat. When pan is VERY hot, add fish fillets and cook 2-3 minutes per side,until spices are dark and fish is opaque and flakes easily with a fork. Serve with lemon wedges.
