Is this stuff good for you, I just bought a dehydrator and I love it, I just want to know if this is one of those things where it is too good to be true.
I am using about 2 lbs of flank steak with the fat cut off, a little marbalization is left though. I marinate it in Worchestershire, soy sauce, a table spoon of tomatoe sauce (unsalted), fresh garlic, black pepper and a little cayanne....i pat the oil off about every hour that it is cooking. I dont add the curing ingredients (sodium nitrate) because I don't plan on storing this stuff for more than 1/2 a day..so is this healthy? and about how much protein am i getting from this, and does the process degrade the meats nutrients at all...thanks in advance
