FYI.. the "white rice" that you speak of is called sushi, the raw fish goes by the name sashimi. And there is not a ton of sugar mixed in with it, approximately 1 table spoon for every uncooked cup. You could also substitute brown rice if you chose to make it at home. I used to bartend back in my younger days at an upend martini sushi bar.
