Green vegetables.

Let's try this again.

I really love spinach and asparagus, but after a while they get boring. I'd eat broccoli, but it's a member of the cabage family and doesn't get along with my digestive tract at all!

The wife makes this hollindaise kind of sauce to serve on the asparagus that is simply YUMMY!

Post up on your favorite greens!
 
spinach+green peppers+sliced cucmber+fresh mushrooms (mayby)+feta cheese+2-4whole eggs+extra virgin olive oil=juve go content and satiated :o

I like the sweetness of red bell peppers, so I tend to use them with my spinach salads.

Another way I like spinach is to fry it up in a pan with some EVO and garlic.
 
Bird's Eye makes a variety of frozen vegetable concoctions that I keep on hand that are very good & you can make different depending on spices....

I like cucumbers, peppers, asparagus, broccoli (can handle it), lettuces (dark green kind), scallions, artichoke hearts canned or jarred, spinach, kale, greens like collard, etc.......

i usually keep it pretty traditional (avocados, lime juice, garlic), although a tiny dash of cayenne gives it a nice kick! adding a bit of cilantro is good too!

I like a bit of cayenne in mine also. I've never tried cilantro, but since I like cilantro I'm going to have to give it a try. How do you usually eat it?

for the cilantro, i just chop it up and incorporate it into the guacomole. the guacamole is definitely part of a cheat meal with of tortilla chips, mounds of cheese, beef or chicken, and jalapenos!

I use it as fat intake, so I skip the chips, although the cheese, beef and chicken is fair game. Although I could eat jalapenos by the tub when I was younger, they're much harder on the system now.

Does anyone else have other ways they use guacamucky?
 
For guacamole I mix mashed avocado, homemade salsa, lime juice & spices together....that's it!! Simple, easy & yummy!

I also use mashed avocado on wraps with tuna & veggies instead of mayo.

I like sliced cucumbers with red wine vinegar or in salads but dipped in ranch dressing or blue cheese is best....

I cook greens with olive oil & garlic & sometimes anchovies....the anchovies melt down so you can't even tell they were there but leave you with the salty taste....but usually I just use the olive oil & garlic -- can't go wrong there...
 
why not some low carb tortillas with beef or chicken, with a smearing of guacamole...
or a low carb quesadilla dipped in guac. or pork rinds dipped in guac.

Well, I've always just steamed kale cuz I like it with stewed tomatoes for some reason, but you could make kale that way. It's got a bit of bitterness to it so that would take some of the bitterness out of it....

I see. So how do you take the hiccups/burps out of the cucumbers?
 
I eat lima beans sometimes. I can usually eat a can of veggies at time, but only a small part if they are lima beans, just too filling. I like them WITH stuff, like in soup or with other veggies though.

You've never heard of zucchini?? Green squash, zucchini -- same thing....

Oh, broccoli rabe is good too -- also can be a little bitter. Good tossed with pasta or fish/chicken, olive oil, garlic & lemon...

I've never heard of zucchini called green squash before.

Have you ever had broccolini? Supposed to be some weird cross between brocolli and asparagus or some such.

Well, with the zucchini I like them better when they're small. I get them next to the yellow squash in the grocery store & they just call them green squash. The big giant zucchinis don't taste as good to me.

A great combo with chicken is asparagus tips (I get em frozen at Trader Joes' for $1.99 a bag) sliced green & yellow squash, peppers with peppers & Green Tabasco sauce & a little olive oil.

Have you ever tried the white asparagus? I've seen it a few times, but white veggies just don't appeal to me.

I like chicken with red bell peppers, a bit of cayene and EVOO. yum
 
I've also seen the white asparagus but they cost too much. I get a lot of veggies at Trader Joes' cuz they are pretty reasonable. I also stock up on frozen bagged veggies when on sale.

Costco has a good frozen stir fry mix that I like & their frozen broccoli is awesome!!
 
I wish I could eat broccoli still....

Doesn't anyone eat peas, or string beans?

Something about string beans or snap peas cooked in bacon fat that just makes me want to get out my deer rifle and go hunting...

I try to eat about 5 different colors of veggies a day. I just buy a bunch, cut them up and mix em. A great salad. BTS SSS I make spinache great, take it out of the bag and eat it. I do not even wash it. I am a rebel

Ah, so the migrant spinach pickers who just came out of the crapper have left you a gift then! Does it make you stronger?
 
yes it does, kinda of like the old HOT STUFF. It had trace rat phecies, I got bigger. So why wash it. Really, packaged food stuff is all pre washed. It has to be. I bet the FDA regulates stuff like that. I never wash frsh veggies.

Mmm-hmm, pickles and cucumbers are a staple in my diet. Sometimes I add in carrots to make it more colourful ;) And my favourite dessert is, of course, BANANAS :lmao:

SSS -- you don't cut the seeds out the the slices silly!! You cut the cuke lengthwise into quarters so you have almost triange shaped pieces, then just cut the section out with the seeds. Easy cheesy!!
 
Pickles are awesome -- wrap a pickle in slices of turkey with mustard! Oh yum!!!

Spinach is good cooked down in olive oil then season & stuf into chicken breasts which are then baked & served with veggies or rice.

Can you tell I don't prep my own food? LOL ;) I'd never thought of cheese on cucumbers though.

Who preps your food? Just curious...

No cheese on cucumbers!! Ewww....Just meant "easy cheesy" is that cutting the seeds out is easy to do....

My spousal unit does all the food prep for me. 'cept the little bags of tuna and salmon I eat as snacks.

Eww no I don't put anything on them no butter salt or pepper I can eat them on there own and everyday with out getting sick of them.
 
If you take a cucumber and cut off both ends, you'll be able to stick a knife handle or some type of shaft down through the end of it, and the seeds will plop out of the other side.

When I was in high school, my parents had a HUGE garden. I loved going out in the early morning and snapping beand and peas off the vine to eat. VERY sweet tasting.

Organic mayo? What makes it organic? Did someone forget to clean the chicken poop off the egg before blending it with oil?

Yeah, but MUSTARD?!?!?! *shudder* I'm still reliving changing my son's diapers many years ago. I never have re-developed the taste for mustard after that. If it's yellow pasty/runny, I'm SO not there.

if you have never tried wrapping your veggies in foil, coating them in olive oil and black pepper with some mrs. dash or garlic powder, then putting them on the charcoal grill while you're doing your steak... you are really missing out!

Mango salsa:

chopped red, green & yellow bell pepper
chopped tomato (about 1 whole)
chopped red onion (small dice) [about 1/2 whole onion)
chopped mango -- 1 whole -- small dice & peeled
hot sauce to taste
lime juice
salt
garlic
finely diced fresh jalapeno if desired
Chili powder if desired

Mix all ingredients together and let sit for an hour or so to let flavors meld. All amounts of pepper, tomato, etc are as desired based on how much salsa you want. Excellent with shrimp chicken, fresh tuna or on chips!!

Fresh Salsa
Use above ingredients except for the mango & follow directions for same & enjoy!
 
There's a restaurant near me that serves Vietnamese Lettuce Wraps & they are awesome & I don't see why you can't make them at home, meat or no. Theirs has chicken.

It's just: butter lettuce leaves, very thinly sliced carrot, scallions, chopped peanuts, sliced pea shoots/snow peas and bean sprouts. Top the lettuce leaves with the veggies & chicken if you want & enjoy.
 
I eat about a ibs of romaine every day, but I'm also a big brocolli fan.

Lettuce wraps are yummy! Addictive too.
 
When I have a spinach salad, I add in black olives, green onions, crumbled blue cheese, red beans, black beans, bacon pieces and good blue cheese dressing.

sorry it took me so long to see this

for guaca i am pretty basic

i dice my avo
add fresh roma tomatoes
chopped serrano chili (a tad hotter than jalapeno)
red onions
cilantro
garlic, fresh of course
lime juice
and a pinch of cumin
i like chunky when it comes to guac
