Classy Skank
Makes 2 servings- 49 grams protein- trace of carbs
1 bunch of spinach- equal to 1 cup cooked!
1/2 Lbs. LEAN hamburger( I've also used venison)
2 T UNSALTED butter
1/2 cup chopped onion
black pepper to taste
1 minced garlic clove
1/2 t. oregano
4 Eggs
2 T. grated FRESH Parmesan cheese
Wash Spinach( IF using fresh) DO NOT PAT DRY- place in a heavy saucepan with a tight fitting lid. Turn heat to med-high and steam leaves until they are wilted 2- 3 minutes. Drain in a colander, pressing out alllll liquid. Chop coarsley and set aside.
In a med skillet, cook hamburger until browned. Drain and set aside.
In a lrage non-stick skillet, melt butter over a med.-high heat. When butter is hot and bubbly, add onion and garlic and saute until soft. Stir in oregano and black pepper. Add spinach, hamburger until spinach is heated thru.
In a small bowl, using a fork, beat eggs and pour over meat mixture. Gently stir egg/meat mixture with a wooden spoon until cooked to your liking. Sprinkle with Parmesan cheese.
