I think eating clean is a lifestyle. Once you start to do it, you realize how good it makes you feel and the results that come with it.
But that said, I don't think anyone here stays on a restrictive cutting diet year round. Most of us will go on 8-12 week periods where you are on a restrictive cutting diet, then go back to eating normally (but still clean).
Staying on a restrictive diet year round will cause hormone levels to plummet, making fat loss and/or muscle gain impossible. I don't think eating a restrictive cutting diet is something you should do year round. Your body needs breaks to make gains, plus for your sanity!
Most people alternate between a cutting diet and a bulking diet - this means we alternate from losing fat to gaining muscle. Eventually (hopefully!), for the non-competitors, you will reach a goal that you wish to maintain. Then you can eat clean to maintain.
