I recently had the opportunity to have some Chicken Salad which was out of this world. Here is what was in it:
Chicken Breast
Non-Fat/Low Calorie Mayo
Chopped Celery
Chopped Egg Whites
Chopped Pecans
Cut Red Grapes
The red grapes gives it a little sweeter taste and makes it taste totally different. Takes the boredom out of plain chicken salad. Grapes add only a few carbs, not much. This chicken salad is loaded with protein. You can use the canned chicken breast meat, but it is best if you make a chicken breast and cut it up.
It was served on Toasted Cinnamon Swirl/Raisin bread by Peppridge Farms (which adds extra calories and a little sugar/carbs). It is great just plain without bread.
