yes, it will become denatured, and therefore less usable, same as any other protein that is exposed to high heat. i tried to bake something with whey isolate, and it was totally dry and rubbery, but regular whey protein works fine.
I've wondered this myself. On my Prolab Pure Whey, it says it can be used in bake mixes. So I GUESS it must be O.K.
I hope it is, because sometimes I'll mix up a scoop with a small amount of water & throw it in a bowl of instant reg. oatmeal. Nuke it for a 2 mins & you end up with a hardened chocolate oatmeal cookie (discovered this by accident
I wouldn't think so, think about it we cook our meets and many of our other foods yet it doesn't kill off al the protein. I mean your not cooking untill it chemically changes like into coal or something right?
I think you can kind of compare it to cookiing veggies. Sure cooking them does remove some of the nutritional value but not enough so that we wouldn't eat them after.
I don't think it does jack to the available protein unless your burning it. This denatureing I think is more marketing jabble. This Tuna is mercury safe unlike other brands. uh huh and what other brands are legally poisening the masses.
