I'll give my answer for why chest on its own. Because you are lifting very heavy and use a ton of triceps when doing chest. My rotator cuff is another reason. I really feel alot of strain on it when I do chest so I really don't want to put more strain on them by doing heavy tricep movements afterwards. When I say chest alone that is not totally true I also hit abs REAL hard on chest day(with heavy weight)
I do chest on monday and do shoulders on thursday giving my triceps time to rest before nailing them with shoulders. I do my shoulders first starting with heavy as I can shoulder presses which hit the tris hard. Then after shoulders I do four different tri exercises(two to three sets) to totally nail my tris. I don't think this is overtraining because my tris have been growing very well and they are getting strong as a son of a gun. I can push more weight with my tris than some of my friends that can out bench me signaficantly.
