BTW lads,the 'holy trinity' of creole cooking is to start with celery, onions and garlic.
I usually saute things when I start in a low sodium stock cube.
yes ma'am... one meal i like to use as a "cheat meal" is a tomato gray. if your careful in what you use to cook it its not bad. i use seasoning blend (already cut up celery onions and garlic)..start by cookin down vegetables while you brown whatever meat you choose (I prefer deer, duck, chicken, or beef). if using wild game i suggest adding like a half teaspoon of vinegar to marinade. then you add tomato paste (2-3cans) to make the base of your gravy. add meat and veggies. thin it with tomato juice untill you get the consistency you prefer. i like to thin alittle to much then add more seasoning and some instant roux (which will thicken it up). cook on low heat when you think it tastes good your done. serve over brown rice.
