When to take breaks in 3-day routine

I'm doing a 3-day split, and I go to the gym four or five times a week. I'm wondering between what days I should take a day off, or if it matters.

Day 1: Chest/Triceps - bench press, incline/decline bench, french curl, tricep press, maybe some dips and tricep kickbacks.
Day 2: Biceps/Back - curls, lat pulldowns, a few chinups, hammer curls, back extension, a few misc. attempts at working the back because I'm clueless.
Day 3: Shoulders/Legs - leg press, a little leg extension, calf raises, leg lunges, military press, lateral raises, front raises.

I try to stick to 3 sets of 6, but sometimes I do more simply because I'm not "feeling it".
What brought this up is that I want to go tomorrow and work chest/tris, but I did legs/shoulders today and wonder if it's too much on my tris. But I'm thinking, if I wake up and they're not sore, go with it. In general, I feel that my workouts dont' go as far as they should.
 
I work on a 3 day split. Work Mon-Wed-Fri and take your weekends off. Works great for me. But when you go on a 3 day split you really need a high intensity workout and don't be afraid to add more sets or exercises because you only work the bodypart once a week and get plenty of rest in between.
