If the time under tension is all that matters, couldn't you just hold the weight isometrically for 30-90 seconds or forever how long it takes?? Why bother going up and down??

Who says this? Its one variable that can be manipulated. Besides, study after study shows that isometric strength training only improves strength at that specific angle that is being held. I like to vary mine because it eliminates momentum and can improve strength. Also, by varying time under tension you can elicite different metabolic responses. I.E. 30-90s t.u.t correlates to a greater growth hormone output.
