Sweet potato fries

They are excellent guys. Just make sure you cook em long enough to get crisp. The first time I did em they were mushy and they sucked

For those of you looking to spice up the boring old sweet potato, try making fries with them. I did this lastnight and it came out fantastic.

Take about 2 large sweet potatoes and scrub them (leave the skin on).
Cut them into steak fry shaped pieces (thick)
Lay them on a baking sheet w/ aluminum foil and brush them with olive oil
Toss them in a preheated oven @ 425
Bake for a total of approx. 25 minutes, turning over once
Take them out, toss them on paper towels, salt and pepper to taste and serve
You can use your imagination with what to serve it with (ketchup, tobasco, etc.)

You can also season the fries with cumin or other spices if you want to get creative.

Whats a good knife to cut sweet potatos? I had tons of trouble cutting them raw.

go for the serated one. ( the one w/ the teeth) :)

I would say either that or a small cleaver (square knife) - like a chef's knife by kinda square....make sure if you use a "normal" knife that it's very sharp & be careful!!

Yea i had to cut some sweet potatos for my daily meal mix that i make. I decided to cut them uncooked and my knife had to be forced so hard through them that I formed a blister on my hand and was way too much work. I also ended up cutting myself. I have a bunch of cheap knives. Anyone have suggestions on some nice kitchen knives that i can buy for reasonable price.

Tried this recipe yesterday. seasoned it with salt, pepper and a bit of chopped parsely before putting it in the oven. ABSOLUTELY BEAUTIFUL! i can't wait to get home from uni today to make myself some more! lol
