Just off the top of my head...
SRV- Rude Mood, Little Wing, Riviera Paradise, Lenny, Voodoo Child
Nearly anything by Frank Marino and Mahogany Rush
Nearly anything by Joe Satriani (fretboard gymnast)
Nearly anything by Steve Vai (another fretboard gymnast)
Nearly anything by Yngwie Malmsteen (sp?) (yet another fretboard gymnast)
Nearly any vintage Les Paul
Nearly anything by Chet Atkins
Most of you may have never heard of this guy, and if you haven't, you MUST hear him if you're even remotely entertained by guitar music: Tommy Emanuelle. I promise you that you have NEVER heard anyone play ANYTHING like him. Chet Atkins said he was by far the greatest guitarist he'd ever heard. In my book, that's pretty powerful accolades.
Nearly anything by Phil Keaggy
Jeff Healey- from the "Roadhouse" movie sound track: Hoochie Coochie Man, Roadhouse Blues, I'm Tore Down
ANYTHING by the late Robert Johnson, Muddy Waters, etc. Were it not for the blues grandfathers, we wouldn't have "rock&roll" guitarists today.
And speaking of the blues grandfathers, I've saved the best for last. There's no fancy guitar work, no screaming lead riffs, no crunchy power chords. It's as simple as it gets, but it has 1,000% more soul than just about any other song I've ever heard.
B.B. King, the original studio version of "The Thrill Is Gone."
If that song doesn't give you chills, then you have no soul whatsoever.
