So what the hell is that? I Google'd that, but I came up with a bunch of super scientific researches and none was about rim jobs. As a Laboratorian I can tell you this for a fact; the composition of normal flora in and around the anus/rectum is composed of a host of bacteria and yeast. For the normal healthy person this won't be a problem. Problems will occur however if the person doing the eating is immunosurpressed, weak immune system, or the person being eaten has some sort of disease state where pathogens, bad bugs, have shifted the flora, ie. salmonella, shigella, e-coli, bugs related to G.I. problems such as diarrhea, food poisioning, etc...

If your both healthy= no worries, I would however recomend brushing and gargeling before kissing, and moreover before doing any muff diving as you can give her a mean UTI if crossing from back to front!
