NY Muscle

I'm not NY Muscle, but I've been told that cooking protein powder would denature (did I spell that right?) the protein. In plain English, it would break down the bonds between animo acids, and make it not as bioavailable. Or something. Just parroting what I've heard...

Ceebs is correct, as would heating flax seed oil, that would turn it into BAD BAD trans fatty acids, and other "stuff" i think...NOT A GOOD THING

So cooking w/ flaxseed oil is bad or good? I use it sparringly when I cook. What do you suggest?

Thanks!! Damn, I wish I knew sooner. Thanks NYM!!!

Most oils degrade pretty easily with heat, so even when you use stuff like olive oil, you should not cook it too hot or for too long. Most protein powders are already highly denatured due to the process of extracting and purifying the stuff. Additional (moderate) cooking is unlikely to dramatically change the amino acid content. The digestion of many proteins is enhanced by some degree of cooking, rather than inhibited. Hydrolysed whey protein is particularly denatured when you buy it. I dunno about egg and soy protein powders. I suspect it depends on the extraction method (acid/alkali/alcohol/ion X, etc...). All in all I wouldn't worry too much about you pancakes. At the very worst they make go a little gluggy, but be just as nutritious.

You can add protein powder to baked goods. Amino acids are absorbed as amino acids. The proteins are broken down in the gut regardless. If cooking destroyed amino acids per se, then how can you get any protein out of cooked chicken breast?
