Ostrich meat - processed as jerkey, ostrich dogs, ostrich meat sausages, fillets, etc... 99.5 % lean. No curing with salt, awesome but a little expensive. Also more protein per unit than any other meat.
i'd love to have a go at ostrich meat. dont know how easy it would be to find it in australia. we've got plenty of its nearest cousin, the emu. maybe try and hunt some of that meat down. wouldnt suppose anyone would know if they have similar levels of nutritional value??
