I've done CKD in the past and it ripped me to shreds. That's not what I am aiming for now.

I'd like to change my diet permanently to low carb to drop some bf and keep it that way. As it is now, I don't eat much sugar or sweets. My issue is pasta and breads. I only eat whole grain and whole wheat, but too much of it. A typical day I probably eat between 300-400 g carbs.

My question is, what are some low cost food options that I can eat long term and not get sick of it all?

I know the basics, meats, eggs, fats, etc, but i hate drinking oil to help fill me up.

I will still have cheat meals here and there, but really need to lower my carb intake.

Can someone give me an example of a diet that would provide 3500-4000 cals that isn't extremely boring and stays under $250 a month?

Do you enjoy cooking?
For me, it's therapeutic: relaxing in the kitchen away from the kids and missus, and listening to some tunes in the background with a glass of wine.

Cooking actually - as daft as it sounds - reduces appetite. You might have heard somebody say..." I cooked last night but by the time I'd finished preparing and cooking it all I couldn't eat any of it".
Excellent at decreasing appetite, for me at least.

I gather you don't want to totally restrict your CHO intake, you just want to decrease it?

1. Have you tried lightly frying beef/chicken/turkey mince in olive oil and adding chopped plum tomatoes, garlic, and basil?
You could then add some risotto or pasta to it or even let it cook in the tomatoe juices.

2. Get some sliced ham or pork and use it in a fresh tomato, lettuce, cucumber, and onion salad. Top it off with some Feta cheese and drizzle in a tiny bit of olive oil and balsamic vinegar.

3. Another one: chopped chicken breast grilled or olive oil fried and add low fat mushroom soup and chuck a bit of rice or pasta in it to cook. Put it on a bed of rocket or spinach leaf.

Basically, use the lean protein meats as bases for some Greek/Italian style meals that have loads of anabolic and health giving nutrients in salads and veggies. Just let pasta or rice cook in the sauces you use with your base.
This will leave you fuller, longer and you maintain all the vitamins and minerals from the veggies etc without draining off.

All you need is:

1. Cheap meats that are/can be chopped, minced, or diced.
2. Olive oil, chopped tomatoes, tomato puree, and garlic or garlic puree.
3. Some dried or fresh herbs.
4. Pasta, rice, rissotto.
5. Salt and black pepper.
6. Vegetables.
7. Salad items.

If you need any clarification just holler. It's very difficult to make food adventurous, especially when you're on a budget. I have to invest in a massive tub of weightgainer to get my kcals in. I simply can't afford to make 5-6 meals a day. However, I do find using lean cuts of meat and making a sauce with it of various combinations can add loads of spin and flavour to some bland foods. Best of all, it don't cost much to do it when you've got the main components.

Thanks for the tips. I enjoy cooking when its for guests or a special meal, but not when its cooking up 10-20 meals for the next few days. Then its just annoying and time consuming. Just cooked up a bunch of chicken breasts and rice to get me through the next few days of work. I season some different to mix it up.

I work 10-12 hr days, then hit the gym after and hate to spend my whole days off cooking.

Uuugggghhh.
