Whole grains are carbs, there are no tricks. Carbs are not the enemy either.
Fats have been the enemy for the last 20 years and everyone has gotten fatter.
Unless you know what you are doing (and you sound like you are just getting into the healthy eating/dieting thing) I wouldn't mess around too much with low carbs.
It is possible to mess up your metabolism when you start eliminating and entire macronutrients, and again, this sort of diet is temporary, it is not something you could use to learn to eat healthy for life and maintain a decent weight.
What I would recommend is that you eat 'clean'. So avoid processed white foods like bread and baked goods, sugar.
My other concern is that you are focused on the numbers on the scale, when your concern is really about bodyfat.
Loads of cardio on a calorie restricted low carb diet will probably have you lose WEIGHT, but what will you be losing? More than likely muscle, so you will end up with a smaller, but still fat you.
It is far better to track things like bodyfat percentages and measurements.
I would also recommend you do some weight training. Putting on muscle is one of the best things you can do for your body, not only will you increase your metabolic rate, but you will look better. You may end up weighing the same, or even more than you do know, but you will look better.
