to eat exactly the same meals every day for 60/90 days then switch it up. Or is it just as good to stick to the principles of getting enough protien, carbs, fats and nutrients in every meal?

How much of a difference is there, if any, in terms of results?
 
Exactly the same meals? Who told you that shit? It's hard enough to get your protein, carbs and straight. If you are creative enough there is a ton of things you can eat to get the nutrition that you are shooting for.
 
You should eat different foods every single day if possible. Such as protein on day 1: salmon/chicken Day 2: chicken/turkey 3: tuna/pork 4: steak/other fish, etc. This will feed your body a variance of great protein from different sources. You should also eat high protein meals such as 1.0-1.5 grams of protein per day, and then one day out of the week, lower your protein to 0.6 grams to shock the body. This is called cycling your foods and protein.
