I just had to throw away a whole can of tuna and a bag of rice because the damn sunflower seeds I sprinkled in were stale and nasty.

Shit, Smurf, you didn't need to do that! If they smell okay they're fine, it's not like ground meat or chicken ... shoot, if you think they smell a little off run them under the tap and blot dry with paper towels then smell them again. The blood and water drains down so the meat gets a slightly paler color. Takes steaks a heck of a long time to spoil (green isn't good but as long as its somewhere in the red/brown range, odds are its fine).

Aged steaks cost a small fortune in a good restaurant, you know what they do with it? Hang a slab of meat on a hook in a temperature controlled room and let the juices run out, concentrates the flavor of the meat.

Alton Brown did a whole thing on how to age your own roast in your fridge before cooking.
