As long as eggs are properly refrigerated (between 40 & 45 degrees F), they stay fresh well past their sell by date. Researchers at a US Dept of Agriculture poultry science facility in Athens, GA found that eggs stay free of bacteria such as salmonella for up to five weeks past their expiration date. And even after 10 weeks of storage, eggs retain their capacity to fluff when beaten.
