Eh - I have always had trouble getting enough healthy fat into my diet, adding one of these to my afternoon meals should help out and stop my late night ANPB cravings.

I'd like to try it with maybe half the olive oil and replacing the other half with unflavored applesauce. That's used as a substitute for butter a lot in low fat recipes. The higher fat will give it a better taste though. Gonna give it a try sometime.
 
Tried these over the weekend. Used protein powder instead of blended oats. Well, it surely wasn't cookies. More like clumps that broke apart like horse manure. Not that bad tasting, even my 6 yr old said they weren't bad and had some. Honestly, if I broke it up it would be an awesome breakfast cereal.
 
This is quickly morphing into some sort of protein monster - and sounds a lot more like breakfast pancakes (eggwhites & oatmeal) than oatmeal cookies.

I'm painting my loft this week so I can't get too creative in the kitchen...I'll see what I can come up w/ next week to try and cut down on the fat/carbs and up the protein and still make it taste/look like a cookie. :Chef:
