Healthy Oatmeal Cookies - Recipe

Just playing around in the kitchen this weekend and tried to make some mostly healthy oatmeal cookies....ended up tasting pretty good too. So if you're ever jones'n for a cookie, give this a shot.

Blend 1.5 cups oatmeal, .5 tsp baking powder, .5 tsp salt, & .75 cup olive oil in a blender (the oatmeal is replacing flour, the olive oil replacing butter)

Add 1 cup of splenda & 2 eggs.

Then stir in 3 cups of oatmeal (mix this part in a bowl, not a blender)

Heat the oven to 350 and cook for 20-25 min.

I sprinkled some splenda and cinnamon on top - turned out pretty good.

Like I said, mostly healthy...much better than your standard 2 sticks of butter, bleached flour, and sugar.

Not a bad idea - what I would do is replace some of the blended oatmeal that is replacing the flour w/ protein powder. It should work out ok, although I'm not sure how protein powder stands up to being baked.

I would NEED to add protein powder, i always like keeping my protein intake at about 20g or more a meal. So i would need to add more.

Im actually going to make these tonight. Ill let you know how it comes out..

Juist gotta pick up some more rolled oats from stop and shop.

You can bake with it. I've tried. Makes an interesting texture. Soft, but a little chewy.

Macros for the batch:

192g fat (58%)
65g protein (9%)
240g carbs (36g dietary fiber) (33%)
-----------------------------
~3kCal

Batch = 18 cookies, so per cookie

10.7g fat, 3.6g protein, 13g carb - 165cal

I'd love to get the protein up in these things - let me know how the protein powder works out.

FYI - If you replace the first 1.5 cups of oats w/ ON protein powder it looks more like this per cookie:

11g fat (53% of calories), 11g carb(24%), 11g protein(23%) - 184 calories

Not too bad, trying to figure out what time of day that kind of breakdown would fit into best. I'm guessing adding one of these to an early afternoon meal would be ok.
