Fibers are well known for their GI lowering properties

But do you know if there is a difference between soluble and insoluble fiber for this purpose ?

I'm using xantham and guar gum and I'd appreciate if they could help decrease the GI of some of my (too high) meals ;)

All fiber will help reduce the GI of foods, but fiber that is bound up with the carbs being eaten will lower it more. In other words kibbled wheat will have a lower GI than wheat flour eaten with wheat bran, whole oats will have a lower GI than oat flour eaten with oat bran, etc...

OK, thx

Any idea on xantham / guar gum ?
