FAT-FREE BANANA CREAM CHEESECAKE...the REVOLUTION!

FAT-FREE BANANA CREAM CHEESECAKE: BY: Mr.X

INGREDIENTS:
1 fat-free graham cracker crust

8-10 ounces FAT FREE cream cheese, softened
1/2 cup EQUAL or other sweetener
2 medium bananas
1 teaspoon lemon juice
1 package (small) of FAT FREE/SUGAR FREE banana pudding (or jello)

******COOKING DIRECTIONS*******************
Dissolve BANANA pudding in boiling water. Cool - 1-3min.

In small mixing bowl, cream together cream cheese, EQUAL. Break bananas into pieces (blending is the best) - mix w/ lemon juice - and add to creamed mixture; beat until fluffy. Add cooled gelatin (pudding) and whip thoroughly.

POUR MIXTURE INTO CRUST:
PRE-HEAT OVEN TO 375 degrees,
BAKE at 375 for 15 min
lower heat to 200degrees (F) and bake for another 45min

Take out of oven, COOL for 1 hr....then place in fridge for 6-8hrs

Ain't this a bitch. I buy all the ingrediants to make a somewhat healthy cheesecake and i just snag any old pie crust off the shelf since im juggling like a bag of sweet potatoes in one hand and like 9 small packages in the other (real men don't need carts). I get home and read the ingrediants on the pie crust. And it has a crapload of partially hydrogenated oils in it. Defeats the fooking purpose.

You can make your own crust....
I have to agree that some stores do NOT carry healthy crust (most do, for I bought a Fat-Free one the other day)......

CHEESECAKE CRUST RECIPIE --FAT-FREE

************INGREDIENTS********************
2 cups of FAT-FREE graham cracker Crumbs
1/5 cup of low-fat (butter (as long as it's natural butter)/peanut butter/or olive spread--or canola oil spread) 1/4 cup of fat free cream cheese
*******************************************

--------------------cooking directions-----------------------------
Mix graham cracker crumbs,butter, and cream cheese. Press evenly over base and up side of 8" round springform pan, to within 1" of rim.
-bake for 10 min at 300degrees (F)
- Cover and refrigerate while preparing filling.

Good to know the next time I make one of these. I'm baking it up with the hydrogenated crust as we speak :)
 
It came out more wet than dry as would be a real cheesecake. I think it was because I didn't add a big enough banana or enough cream cheese. It did taste pretty damn good though. When you made yours, MrX, did it come out dry or puddingy?

Nope, mine was more wet but had the puddingy texture like cream cheesecake is supposed to. Hey, if it tasted good :) that's all that counts lol.

You can make it wet by decrease the cooking time, instead of 45 min, try 30 min at 200(F). That might be the answer.....

.... when I start my bulking phase I'd like to try your cheesecake.

But how much water do you dissolve the pudding in?

And since I can only find VANILLA or CHOCOLATE fat-free pudding, how would I make a vanilla or chocolate version?

To dissolve, use 6-8oz. of water........

You would use the same guidelines no matter the flavor, eg chocolate/vanilla etc.
