Can I cook chicken breasts on the weekend, cut into small strips, freeze them, then get them out in the mornings and take them to work and eat them for lunch after the have thawed naturally over 5 hours?
Yep. It'll work just fine. Freeze the chicken spread out on a cookie sheet then store in a freezer bag, it will stay separated and it will be easy to measure out portions.
