can these recipes be adjusted

can someone figure a way to adjust these recipes to where they are acceptable for me to make and eat or are these no-nos?

Healthy muffins

2 c. shredded unpeeled apples
1 1/3 c. sugar
1 c. chopped cranberries or any kind of dried fruit or raisins or blueberries
1 c. chopped nuts
2 1/2 all purpose flour (could use wheat here )
1 tbs baking powder
2 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
2 eggs, slightly beaten
1/2 c oil

heres another;
Peanut butter and jelly muffins
1 c. pnut butter
1 egg
1/3 c. brown sugar
1 c. milk
1 1/2 c. whole wheat flour
1 tbs baking powder
1/2 c. grape or straw. jelly
1/3 c. sugar
last one i swear:
tuna or salmon muffins

2 6 oz cans tuna or salmon, drained well
2 eggs
1/4 c. celery, chopped fine, 1 oz
2 tbs onion, chopped fine, 1/2 oz
1/4 c. green pepper, minced, 1 oz
2 oz shredded cheddar
salt and pepper to taste
pinch old bay seasoning
Mix all ingred. and spoon into 6 well greased muffin cups. bake at 350 for 30 min until puffed, set and lightly browned around the edges.
6 servings.... can be frozen. per serving: 109 cals, 8 gm fat, 1 gm carb

*If anyone knows a good homeade protein bar i could make and take on the go (that won't keep me from my goal of course) I would loooove that.

I think it depends on your diet & body & goals. For me, I would limit it to one fruit, preferably a low GI fruit like the blueberries. I assume the shredded apples are to add some fiber and moisture. I would replace that moisture with some skim or soymilk. But, I have issues with sugars.

Use a different flour (i.e., rice flour or whole wheat flour) or a combo of flour (decrease the amount of flour if you do) & protein powder &/or ground flax seeds or wheat germ.

That's ALOT of sugar in that receipe. I assume the brown sugar is solely there to add color. Maybe add ground bran or kashi cereal to your flour (decrease the amount of flour if you do) if you want "brown muffins".

This looks GOOD to me. :p I'm going to make them this weekend. I need a nice protein snack in the afternoon.

I apologize if I didn't add measurements in my other posts. I've been cooking for 20 years and developed the habit of just knowing how much to add.

I recommend adding some vanilla or plain protein powder to those muffin receipes. I would use a whole wheat flour or another kind of flour in lieu of All purpose. All purpose flour is worse than some drugs, IMHO.

Sorry GF I don't do much cooking ... chances are I couldn't just eat one muffin lol :chomp:
 
nycgirl this is the recipe for a tarter sauce like topping that goes on the tuna muffins.
TARTAR SAUCE
1/4 cup mayonnaise
2 tablespoons dill pickle relish
1/8 teaspoon celery seed
Dash pepper
1/8 teaspoon dill (optional or use for garnish)

Mix all but the dill in a small bowl. Spoon about 1 tablespoon sauce over each Tuna Muffin.

*I'm sure you could use low fat mayo in place of the reg.*

1 cup cup oat flour
1 cup whole oats
1 cup protien powder (whey will make batter wetter)
1 tbs baking powder
2 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
2 whites eggs, slightly beaten
You may need to adjust your cooking time...

heres another;

lots of protien bar recipes in the cooking thread.

I looked again at the recipies.... I use Stevia for sweetner, I can't use Splenda myself... so the .5 cup I listed should be STEVIA, not Splenda.
 
For the tuna muffins (and the others too), do you have to use any baking powder to make them rise? I'm not much of a baker, but motivated by these recipes, I picked up a muffin tray yesterday at the grocery store.

Anyway - try using FF mayo for the tartar sauce and maybe a small spoonful of Dijon Mustard and/or a dash of Worcestershire sauce....

Looks like the other ladies got you covered on the muffins.....
 
Trader Joes Wasabi Mayo is a thing of beauty in it's full fat force, used sparringly it will give your fish a kick. I'm a full blown addict, I use it on everything that has a mother and a face.

rooneytunes, there is baking powder in the 1st two recipes...yes you need it. But not for the tuna muffins.

Thanks!! I was mostly interested in the tuna muffins, so I appreciate the clarification. I'm going to make a batch this weekend....let's hope they turn out okay <fingers crossed!>
 
Yummy! My bf is bulking, which means I'm baking! He's careful about snacking throughout the day at work... I made the tuna and the PB&J for him. Here's about what I did for the PB & J (bad with exact measurements)

1 c. all nat. peanut butter
1 egg
1/3 cup splenda
1/3 cup strawberry protein powder
1 c. skim milk
1 c. oat flour
1/2 c. oatmeal
1 tbs baking powder
.5 c. strawberry polaner preserves, sugar free

Result was decent - a little more dry than I expected, but a good treat!
 
I made the tuna muffins today and they were delish! :chomp: It really was a simple process. I should mention I've never baked much before and was inspired to buy a muffin tray only after seeing this thread. :D

I used liquid egg whites (from carton), fat free american cheese (if you're wondering, I don't think you need the cheese for this recipe and can eliminate it if you're avoiding dairy) and threw in curry powder instead of pepper & old bay seasoning. The muffins came out rather soft and next time, I may even dice up some chillis or hot peppers and throw them in there for a real savory muffin. Of course they are best when warm, so instead of baking 6 at a time, I'm going to make the mix and refrigerate it for a few days and just bake 1-2 at one shot.

Thanks to GetNFit & Caligirl for posting and modifying these recipes :rose: This is one portable convenient high protein/low cal & low carb food to haul around.

Banana muffins

Mix together in a blender:
-2 mashed bananas
-3 egg whites
-1/2 cup Splenda brown sugar
-1/2 c. unsweetened applesauce

Then mix in the dry ingredients into the mix w/ a whisk
-1 cup oat flour, 3 scoops whey (the original recipe called for 1.5 cups of oat flour, but I want to throw in some protein here)
-1tbsp cinnamon
-sprinkle of salt
-1tsp baking soda
-1/2 tsp baking powder

Bake at 350 deg for 45 mins.

Roony - that looks decent to me.....just hope that much protein powder doesn't "turn" during baking - as in make the muffins taste/turn out funny......I've never baked with protein powder myself....Let us know how they turn out!

Thanks guys...I'll report back on how this recipe turns out. I wanted to get some protein and less carbs so that's why I was wondering if I could bake with a good bit of whey in place of flour. I looked into almond meal (almond flour) as well but it is really high in calories. I may increase the egg whites a little and reduce the whey amount now. Stay tuned :)

Well, I went ahead and made these banana muffins with 3 scoops of vanilla whey and they turned out fine - a little crunchy on top and not super soft, but I also didn't use the recommended applesauce so that could be why. But yes, apparently baking with whey is okay.

I modified the recipe further to only include:

1 cup blended oatmeal
3 scoops vanilla whey
1/2 cup egg whites (from carton)
2 mashed bananas
6 packets splenda
1 tbsp pumpkin pie spice
baking powder and baking soda

Makes 8-9 muffins. 1 muffin = ~120 cals (15g carbs, 12g protein, 1g fat)

Possible add-ins since it's not that high in cals: milled flax or crushed nuts like walnuts or pecans

to get some added protien you can use Tofu. Use it in place of the applesauce or use the applesauce too and add in a bit more oats. I bake/cook with Whey all the time, there are better brands than others, after all my experimentation Twinlabbs Whey Fuel holds up the best, a bit spendy but worth it. On Whey came in second.
The Whey will make your batter whetter as you probably learned, so the Tofu or the flour is important and whey really cannot be used as sub alone, you still need some glutent. Firm tofu is great to use for baking with less flour because it hardens as it cools. When baking cake/muffins that you want to rise, just be sure you use the Baking Powder. It's fun to fool around with stuff, you just need to understand the basics and the you can create anything!

Okay I tried the Tuna Muffin recipe w/a couple of variations. I don't bake much but next time I need to add a little more onion and more spices.

Tuna Muffins
12 oz can tuna, drained well
5 egg whites
2 tbsp Whole Ground Flaxseed meal
1 Scoop GenSoy Soy Protein Powder
1/4 c. celery, chopped fine, 1 oz
2 tbs onion, chopped fine, 1/2 oz
1/4 c. green pepper, minced, 1 oz
salt and pepper to taste
pinch old bay seasoning

Mixed all ingred. and spooned into 6 well greased muffin cups. bake at 350 for 30 min until puffed, set and lightly browned around the edges.
