A fitness model physique IS big and ripped... As for mast and winny they dry you right out bringing out definition thats normally blurred by water bloat, you'll never look as good when you come off them as you did when on... Those points aside your plan seems pretty solid to me, I'd say if you want to see small changes over time, avoid watery cycles so you can better see where you're at, make small adjustments to your diet instead of jacking your calories way up and down and experiment with different compounds to see what you like... Tren is probably way overkill for what you're asking...
