Anyone know any good fried chicken recipes, as in the coating?

thanks guys and gals keep them coming. as you may or maay not be aware we dont seem to eat that much fried chicken over here recipes are more difficult to find. in as much as to know if they are any good or not
 
you are making me hungry. I have not had fried chicken in three years!! OMG. well good old fashioned fried chicken.

I have had boneless buffalo wings if that counts. lol.
 
yep... corn flakes works great...

I've tried a few things here and there... adding in the right seasoning is the key. When I fry chicken I allow it to sit in seasoning overnight... I opt for either Italian dressing with different spices, or even ranch dressing spiced up. then add in eggs to the marinade... a mixture of flour, crushed corn flakes, and bread crumbs...

Alot has to do with the heat of your grease also... to hot, it burns the outer crust and the inside isn't cooked enough... to cold, you end up drying the chicken out.

Don't even ask me what temp I set mine to... its like the third red line before Hi.. LOL... I'm really old cajun when it comes to cooking and directions... I measure things in my hand, a dash of this and that and... well... ya know...

One weird trick my granny tought me about setting cooking oil to the right temp for frying was to get a match and actually put it in the oil, if it ignites... ya good to go... I am still really freaking scared every time I do it... I think everything will just explode.
 
just put the match in the oil? If it ignites its at the right temp? Im gonna try that. (I mean have someone else do it for me.)

progresso italian bread crumbs work nice too. . .especially on skinless, boneless breast. . .i usually rough them up a little with the meat mallet first. . .
 
i know what you mean, ive just got a reel hunger on. Esp. as im mid cycle!!

I put a lil mustard and hot sauce in my egg wash and then I used a mixture of flour, bread crumbs, dry ranch powder and seasoning for coating *yummy*

now I'm really hungry! butthole!!! lol
