What are your favorite seasonings to add to meats?

Mrs. P...I'm soooo terrible about my homemade stuff and the measuring aspect..

A pretty close example though: Small whole chicken- approx. 5-6 lbs. You can't mess up this at any rate! I do not think you can over inject anything either.

Use:

1/4 cup Olive Oil
1/4 Cup Ground Ginger root
3 Heaping tablespoons of garlic
Red Chili Pepper to taste( I love the sweet ginger taste along with the spicy Chili taste!)

Inject the mixture under the skin of 'da bird or roast( as directed on the package of the kit)

I also rub the bird down with this mixture-PERFECT FOR YOUR ROTISSERIE!!

Another favorite type of sauce:

2 Large Red Bell peppers
1 Jalapeno pepper( OR MORE IF YA LIKE IT HOTTTT)
4 T. Lemon or lime juice- FRESH!
1 t. Olive Oil
1/4 t. Black Pepper

Broil Peppers on grill or in oven til skin blisters.Remove skin- MIX ALLLLL the above ingred. into blender-til VERY soupy! You can use this as an injection sauce OR you can double this recipe and use for a dipping sauce for chicken!

ENJOY!

I also love this recipe for Turkey and chicken or Beef

Chipotle Sauce:

1 cup Non-fat Yogurt- OR REG. yogurt
4 T. Chopped green onion
1-2 chopped, seeded, jalpeno peppers( or as many as you can stand) :)
2 T. Creamy Peanut butter

Place all ingred. in blender. Cover and blend on med. speed. Inject into chosen meat!
 
Yummmmmmm! OK...you've certainly peaked my interest here!!! I can't wait to try some of these things out. I love to cook and for the past year I've cooked fairly plain...just in the last couple of months have I ventured back into my creative cooking nature. Thanks for sharing all of those ideas. I'm sure this will make TheStromba happy too. :)

That sounds goood.
But It wouldnt technicaly be "Chipotle" unless they were smoked jalapenos.

Hans...Not everyone has a smoker though ! I like it better this way to be honest- I do not enjoy my veggies smoked.
 
I think I have every Mrs. Dash flavor out there. All of them make a nice difference in taste.

I used some ginger in my shrimp and oriental veggies last night...made it taste much more authentic! The ginger shrimp and fried rice...it was delicious! I posted in the brown rice thread about how to make Chinese fried rice...it's become a weekly favorite here. :)
