Thanks AAP for the chicken recipe

I've been cooking my chicken by baking it in the oven or cooking it in olive oil for years which is a pain in the ass if I want to cook more than 2-3 pieces.

You briefly mentioned in one of your posts about boiling chicken. I stuck an entire package of chicken in a boiling pot and had it done in under 20 minutes. No freaking mess, totally healthy, and quick. Plus I have chicken for all of today and tomorrow and I can pack this shitz up and take it where I go.

I did stick some olive oil in the water to prevent the water from boiling over the pot and to add some flavor. Bitchin.

It takes 17 minutes to cook long grain rice in the microwave. I need to find a way of cooking it quicker. Maybe soaking it overnight in water in the fridge?

It was juicy chicken too, not dry like when I bake it. yum!
 
Sounds like a good idea. Although, fried chicken is tastier.

I think black people like fried chicken. Hey Army Vet, have you heard that also? And speaking of blaque people, would you happen to know if one is running for president? What was his name again?

I just brown 3 lbs of 90% lean beef; drain it; add 2 packs of taco seasoning & water; simmer it til the water is gone. Cook up 3 cups of wild/long grain/wheat rice. Separate each into 9 Tupperware containers and I'm set for 3 days. After that's gone it's 2-3 lbs of chicken tenders stir fried with a microwave potato or yam...then I eat shit all weekend.

i bought those for my husband but was weary of eating it myself.

How do you cook it? How many cups to do cook at a time?

I take a 1:1.7 ratio of long grain rice to liquid (water or stock), put the rice in season with kosher salt and red pepper flakes and slightly toast, add water wait for boil cover and set to low for up to 20 min (I check near the end) and poof it's done.

1 cup of rice to 2.5 cups of water. Chuck in a bay leaf, boil, cover, then simmer it on low heat for 55 minutes. I used to cook it in chicken broth, but my BP is high and I'm trying to cut down on sodium. I hate cutting down on sodium. Salt is delicious. Crispy, salty, deliciousness.

huh

maybe it's the short grain and the amount of water

i make my own stock (you control the salt)
my fav is shrimp stock - i take all the shrimp shells save them in the freezer and when I have enough I simmer them and strain. YUM!
 
BOILED chicken? sounds like a new england/yankee thang....here in new orleans we fry, broil, bake, stew, bbq chicken. but BOIL IT? :sick: :worried:

Jesse Jackson ran for president once, so did Al Sharpton. After those two they gave up though. Got tired of losing.

Isn't instant rice processed though? I want to make sure I am eating the right carbs.

Why would you nuke rice if it take 20 min to cook on the stove top?

It is easier to clean up. Rice in the microwave NEVER sticks to the container, unlike on the stove. Also, the water doesn't overboil in the microwave, which will dirty up my stove and thus it takes time to clean.

I am an efficiency freak.

Some blaque dude on HuffingtonPost.com also said they were eating PEOPLE down there during that little storm you kids called a hurricane. I'll stick to boiled chicken.

We actually have one but only my wife uses it (she eats white rice though). I will pull that out and try it next time. I am so used to the microwave it is second nature.

Mine takes 35-40 minutes also... I use a rice cooker. Screw the instant rice, taste like shit. Microwave rice also taste like shit.
