Another one to try could be a little soy sauce mixed with a touch of oil, and then stir fry the chicken instead of roasting it? You'd literally only need a tsp to flavour the chicken. I would check the salt content though first, because soy sauce can vary massively in salt - some very high! There are specific low salt ones though if you hunt them out.
Just looked at the Mrs Dash website and there are some good things on there - we don't get them in the UK (or not that I've ever seen) but they sound tasty. Quite a few low carb recipes on there for chicken, most seem fairly easy at a glance.
Garlic chicken is always good, as is chilli chicken - just buy / prepare some pureed garlic yourself, or get some chilli oil, and paste some on the top of the chicken before cooking. All quite simple
Failing that, if you fancy something different, maybe try wrapping a little parma ham or bacon around the chicken breast. Again you'd need to watch the salt on this as ham / bacon can be fairly high in salt, but you'd only use a little bit so this could be a variation on the chicken and sauce theme
