should i stay away from the skin on chicken?

Unfortunately, it is where a good portion of the flavor is. So yes, that would be where it is most fatty.

From a cook's perspective, at least.
 
buy a bag of skinless, boneless, chicken breast and a bottle of your favorite flavor of marinade. dump the bottle in the bag and let it defrost/marinade in the fridge for a day.

bake, covered in alum foil @ 350 degrees for ~35-40 minutes. Tons of tasty chicken breasts for you.

why not create 1 big "Should I stay away from X" thread rather than 1 for each thing you are asking about? I'm sure the same people that can comment on chicken skin will comment on red meat!? ;-)
 
ya i dont know the boneless chicken just doesnt have any flavor but i havent tried the marinating i must admitt, Ill have to give that a try.

just make sure you cover it with aluminum foil before you bake, otherwise it can get really dry and tastes like ass....
