You can use any AAS to cut. Your diet is what will give you your desired look.
I would not touch any AAS unless I had HCG and Clomid before I started. So, yes you need pct.

Winny is hit or miss and even more so if you take it alone. Are you opposed to injections? I would diet down and cardio up for a month to 6 wks. Then add in some anavar, turnabol, and primobolan. This sounds like a lot but it won't affect the androgen receptors much and PCT would be easy. You sound like you already have the foundation that most people have to take test or strong androgens to get. You are in a good spot. What kind of cardio are you doing? How many days a week do you hit the weights? How often on the cardio?

I don't lift, except my own body weight cuz i rock climb. I climb one day, then cycle 20 miles within 1 hour with my road bike the next, then climb, then cycle etc... and rest on sat & sun

I can do one armed pulls and such, so i just wanted to increase my performance with my climbing a lot more.
 
The winny can be very bad on the joints. Just get you some anavar and take 70mgs or so a day. That will make you stronger and likely increase your performance but won't dry your hinges out like the winny.
