thanks giving and Christmas is coming and we all know what that means. People
pigging out and stuffing there faces. Lets try to make it a healthy one this year. In this thread place post up and healthy holiday recipes you may have. Ask for any specific recipes you want,and just have fun. I will post up some of mine as well.

I will start with something big rick rock asked me the other day. He asked is there a way to deep fry a turkey with out adding to much fat or making it to un healthy. Well yes and no. First off its all in how you cook the turkey. If you deep fry your turkey at a high heat
(350 oil) and use a clean high temp oil like vegetable oil. The turkey will not absorb as much oil and fat as if you fry it at a cooler temp with other oils that brake down at lower temps.when cooked correctly 3.5 ounce piece of deep-fried turkey with skin contains about 12 grams of fat.Roasted white and dark meat with the skin contains about 10. Wow not a big deference at all just 2 grams of fat. Just wait theres more.
If cooked right at a high temp that 2 extra grams of fat is only skin deep. Take of the skin and you take of 3-4 grams of fat.

When you buy A deep fat turkey fryer you will find all the instructions you need inside the box. I can't stress enough that you should never for any reason deep fry your turkey inside your house. DO IT OUT SIDE PEOPLE.

Ive deep fried a turkey a few times, I cant imagine someone doing it inside there home.LMAO
 
stuffing.
2 tablespoons olive oil
2 medium onions, finely chopped
4 stalks celery, finely chopped
4 tart apples (such as Granny Smith), cored and diced
2 teaspoons dried basil
4 sprigs fresh thyme, or 1 teaspoon dried
2 teaspoons chopped fresh sage
5 cups cubed bread, preferably 2 or 3 days old ( you can use low carb bread)
1 cup chopped, toasted pecans
1/2 cup chopped fresh parsley
salt to taste
freshly ground black pepper
1/2 cup low-sodium chicken broth



1. Heat the oil in a large nonstick skillet over medium heat. Add the onions and celery and cook until the vegetables are soft, about 10 minutes.

2. Add the apples, thyme,basil and sage and continue cooking until the apples soften, but still hold their shape, about 5 more minutes.

3. Transfer the apple mixture to a large bowl. Stir in the bread, pecans and parsley. Add just enough chicken broth to moisten the stuffing and season to taste with salt and pepper.
(This can be made up to 2 days in advance and kept covered in the refrigerator.)

4. Preheat the oven to 350°F.

5. Bake the stuffing, covered with foil, for 30 minutes. Remove the foil and bake until the stuffing is golden brown on the edges, about 5 more minutes.
 
Green Beans in Peanut Sauce

1 lb. fresh green beans-ends trimmed and sliced
3 tbs. Organic Peanut butter-smooth or chunky-NO HONEY OR SUGAR ADDED!
1 cup veggie stock-or LOW SODIUM canned stock
1 minced garlic clove
2 tsp. peeled and finely miced ginger
1 tbs. lime jiuce
1/4 tsp. cayenne pepper
1 tbs. low sodium tamari soy sauce
1 tbs. minced fresh cilantro

Cook green beans in boiling water until just tender, about 5 minutes or more. Drain and set aside.

In a small pan, bring peanut butter,stock ,garlic,ginger lime juice,cayenne pepper and soy sauce to a boil.Reduce heat and simmer 5 minutes.

Pour sauce over green beans.Sprinkle with cilantro and serve hot.


I find these green beans so much more rewarding that the crappy fried onion, mushroom soup crap served at most Thanksgiving dinners.

I love these when other people are chowing down on the fatty hors d'oeuvres.

Cheese-Filled Cucumber Slices

*YOU can double or triple this recipe if more than one person is health conscience**

I large cucumber
1/2 oz Swiis cheese, shredded
2 tbs. part skim ricotta cheese
1 tbs. EACH of : chopped scallion, fresh dill weed,and whipped cream cheese
White pepper to liking

Cut off end of cuke. Using a fork,score and ppel cuke.Cut cuke in 1/2 corsswise and remove the seeds. Set aside.

In a med bowl combine all the remaining ingreds. Sppon 1/2 the mixture into cored cuke. Wrap each cuke with plastic wrap and put in fridge until chilled.

Remove plastic wrap and cut into slices and serve.

ENJOY!

I take these babies with me when I know NOTHING will be served at parties for ME to eat.
