Just in time for summer!! Great with chicken, shrimp, grilled tuna steaks or on tortilla chips (make your own or purchased)
1 mango, peeled & chopped
1 medium-large tomato, chopped
Chopped bell pepper (different colors are attractive) amount as desired
Chopped red onion (1/4 to 1/2 whole onion depending on how much you like)
Chopped scallion, if desired
Hot sauce or chopped jalapenos
Salt if desired
Pepper
Lime juice
Chili Powder, optional
Garlic, optional
Mix all ingredients together & let sit for a couple of hours for flavors to blend. Serve & enjoy!!
Homemade tortilla chips:
Take any size tortilla and fold in half. Cut along fold. Cut in half again, then again. You should have wedges. Spray pan with cooking spray, place tortilla wedges on pan & spray with cooking spray. Bake at 350 degrees or until crisp.
