I'm just wondering if you have any semi healthy ideas for a birthday cake. It's my BF's B-day next week & I need something that's a bit healthy. There is NO WAY he will eat any chocolate or heavy desert
Thank you for any ideas
 
Angel Food Cake is lighter than normal cake. Top it with some fresh berries and FF Cool Whip.

You could even make it with the Splenda/Sugar mix they have now.

Whenever I make cake out of a boxed-mix, I use egg whites or egg substitute & applesauce instead of whole eggs & oil..... Then I use 1/2 the tub of frosting..... Little healthier...

You could always leave off the frosting & sprinkle with powdered sugar instead or melt down some jam into a glaze & pour that over top.... "Melted" vanilla frosting can also be used as a glaze....

BTW.... does he like Apple Crisp?? Use canned apple pie filling or make your own (if you need a recipe let me know) & top with a "crumb" mixture.

Crumb mixture:
~1/4 to 1/4 cup oatmeal
~ 1/4 cup (or less) flour (try half WW & half regular)
1/2 stick butter, softened
Brown sugar or Splenda
Hmmm, could add some almonds or walnuts to this....

Use a fork to mash together till crumbly or pulse in a food processor.

Put apple mixture in glass dish or pie pan (no holes) & top with crumb mixture. Bake till golden (about 30 mins) & serve with vanilla ice cream, whipped cream, etc.
 
Yeah, he loves apple crisp - actually he loves ANYTHING sweet. He just can't eat it for a while. He trains brazilian Jiu-Jitsu & he goes for his next belt in Jan. (Has to be in top form!)

I used to make protein / oatmeal cookies sometimes - they are ok. You could probably alter them to make them tastier...
Brazilian Jiu-Jitsu

* 1 cup peanut butter
* 2 cups brown sugar or 1 cup BS & 1 cup BS twin
* 2 egg whites + 1 full egg
* 1 cup skim milk
* 1 teaspoon vanilla extract
* 3 soy PP (stuff you can use as flour)
* 1 teaspoon baking powder
* 1 teaspoon baking soda
* 1 teaspoon ground cinnamon
* 2 cups rolled oats
Can use:
* 1 cup chopped walnuts
* 1 cup raisins
* 1 cup semisweet chocolate chips
* I like 1/2 cup butterscotch chips & 1/2 cup CC

I you just cook them like regular cookies. I just check them every 10 min. or so. They normally take about 15 min. They are sticky to put together, and they stay in whatever form you roll them in. They are ok, and quick to grap if on the run.
Oh, I add a bit of SF applesauce sometimes too.... I just guess at the amount.
